Abstract

Shallots are commonly used as raw materials to add flavor and enhance the taste of various dishes. As a result, the production and consumption of shallots in West Sumatra is quite high, creating the need for an efficient method to handle and process them. A shallot slicing machine is useful for slicing large quantities of shallots in a short time, with adjustable speed settings. The purpose of this design is to develop an onion slicing machine equipped with a speed controller, as well as to create detailed working and assembly drawings for the machine. The working principle of this slicing machine involves placing peeled shallots into a funnel, from which a rotating blade slices them. An electric motor drives a pulley system, where the driver pulley is connected to a driven pulley via a V-belt. The driven pulley rotates a shaft, at the end of which a knife plate is mounted. The sliced shallots then fall into a container placed below to collect them. The design process begins with data collection, followed by calculations, design drafting, and material selection. The final design yields a machine with a slicing capacity of 450 kg/hour and the following specifications: 600 mm in length, 395 mm in width, and 650 mm in height; powered by a 1 HP motor with a rotation speed of 1400 rpm
